Meal In Progress - Pumpkin Spice Pancakes




Everything tastes better when it has pumpkin spices don't you think? Especially this time of year. This is a quick adaptation you can make to any pancake or waffle mix. I used a gluten free pancake mix but you could make these from scratch too using any recipe you prefer. Pancakes are not too finicky so it's usually pretty easy to add a little something and not mess the whole thing up.





This is all you have to do. To your dry ingredients add about 1/2 teaspoon each of cinnamon, cloves, nutmeg, allspice, ginger and cardamom per 2 cups of flour. Also a sprinkle of brown sugar will bring out the richness of the flavors and a deep sweetness. Proceed with your recipe as usual and voila! Pumpkin Spice Pancakes. 

These were so tasty. I will definitely be making them again. It only takes a couple of extra minutes and you don't need to bother with any actual pumpkin. The spices are quite enough to transform these little cakes from ordinary to super delicious. Enjoy!
